Today I've decided to share an incredibly easy recipe. I like this recipe because it uses whatever meat I have on hand and makes great leftovers for lunch the next day. I call it Stir Fry From A Can. It is far from gourmet but it's inexpensive, fast and versatile. You can trade out any of the ingredients for what you have on hand or what your family prefers but this is what works for our family. I usually make it when we have left over turkey or rotisserie chicken although my husband has been known to make it with sliced hotdogs!
Stir Fry From a Can
3 Tbsp vegetable oil
2 cans diced potatoes
1 can peas
1 can mushrooms
2 cups cooked chicken (shredded or diced)
Add oil to large frying pan and let it get hot. Add diced potatoes and cook at med-high heat until potatoes get slightly golden on the edges. Reduce heat to med-low and add in peas, mushrooms and chicken; continue cooking for 7-10 more minutes to heat veggies and chicken through.
